Lydia Willing, FLAWR Honey tending to her Boulder, Colorado bees

Our Story

Flawr is a Welsh word that translates to flavor. The flavor in the raw Flawr honey and comb, comes from the open space wildflowers, fruit trees and rural organic farms on the northern edge of Boulder, Colorado.

The major goal for Flawr Honey and Comb Company is to help promote and provide a healthy environment to support bee populations, these essential members of our ecosystem. Honey is a biproduct of caring for and keeping bees. Your support of Flawr Honey and Comb Company, by purchasing our honey, allows us to continue this key mission.

This is the inaugural year for Flawr honey and comb. It was a banner season for a new bee colony. This colony got a strong start as it was a split from a Haldi Honey hive. A strong split, paired with the mentorship and generosity from Haldi Honey beekeeper, Anne Wiper, was key to getting a healthy colony. This hive is nestled in the apiary next to the Haldi Honey hives. It was critical to have the ability to compare the Flawr hive’s progress against these other organically treated, well established hives.

Beekeeper Lydia Willing tending her bee hive

Getting started was a family affair. The name Flawr honors my husband, who is Welsh. His support and craftmanship, was critical as he built my hive. He also made it possible to acquire the bees through a trade of the high-quality hive components, for the hive split (queen and bees). To keep the family connection going, thanks to our son, Alex for designing the logo.

During winter the bees cluster in the hive to keep the queen and colony warm. This infrared photograph shows the apiary and healthy hives staying warm on a subzero Boulder night.

Raw Honey

Raw honey is left unpasteurized and provides the most nutrients and benefits. Flawr honey and comb is raw honey. The honey is simply extracted from the honeycomb frames by spinning in a large centrifuge. As it passes through a combination of two mesh filters any remaining wax is removed. Once it is transferred into sterilized jars it is ready for consumption. Honey has a very long shelf life. Keep it at room temperature and it will last for quite some time. Crystallization is a natural process in honey, though we have not seen much crystallization from the honey in this apiary. That is due to the source of nectar for the honey. Crystallization is a result of the glucose content found in the flower nectar that the bees collect to generate the honey. You can bring honey back to a clear liquid. The bees keep it clear and liquid by maintaining a hive temperature of 95 degrees Fahrenheit. Since we leave it at room temperature, we might see some clouding or crystallization over time. This honey is still nutritionally good and has not spoiled. You can use heat to bring back the clarity, just not too hot or for too long.

Our honeycomb is simply cut from the wooden frames in the hive and packaged. It’s the job of the youngest bees in the hive to create the wax comb that makes up the natural packaging for the honeycomb.

One key benefit of raw honey is its terrific flavor. But raw honey is also purported to have numerous health benefits. In order to maintain the benefits, you should never heat raw honey above 140 degrees Fahrenheit for more than 2 hours or above 160 degrees even for a short period of time. High temperatures can lead to caramelization and loss of beneficial qualities.
